Mylar bags for freeze drying are maximum-barrier flexible packaging structures designed to maintain the dry, oxygen-free environment that freeze-dried food requires for decade-scale shelf life. 

Freeze drying removes approximately 98 percent of the moisture content from food through a sublimation process, converting moisture from solid ice directly to vapor without passing through a liquid phase. 

The result is a product with extremely low water activity, excellent flavor retention, and theoretically indefinite shelf stability as long as the product remains sealed in a zero-oxygen, zero-moisture environment.

The word theoretically is important. Freeze-dried products only achieve their theoretical shelf life if the packaging maintains the conditions freeze drying created. A bag that allows oxygen infiltration, even at rates as low as 0.1 cc/m² per day, will progressively oxidize the product.

Standard food packaging, even quality barrier films, is specified for products that have measurable water activity and reasonable shelf life expectations.

Vacuum sealing a freeze-dried product removes most of the oxygen from the headspace but not all of it.
